Lauren Hoe joined Weber State for the 2026 season in her first year as an assistant coach.

Hoe was a standout player at Weber State from 2019 to 2023. During her career, she was a key contributor to the Wildcats 2019, 2021 and 2022 Big Sky regular season championship teams, as well as the 2022 Big Sky Tournament championship team. Hoe helped lead the Wildcats to two NCAA Regional appearances, including being part of the first team in Weber State and Big Sky history to win an NCAA Regional game in 2019. As a Wildcat, Hoe earned numerous accolades. She was named 2019 All-Big Sky Conference Honorable Mention – Catcher, 2021 All-Big Sky Conference First Team – Catcher, 2021 Big Sky Conference Player of the Year and 2022 All-Big Sky Conference Second Team – Catcher. A four-time all-conference selection, Hoe left her mark in the Weber State record books, ranking in the program's top ten career lists for multiple offensive categories, including home runs, slugging percentage, on-base percentage, runs scored and doubles.

In May 2023, Hoe became the first-ever Wildcat to sign a professional softball contract, joining the Bonn Capitals in Germany. While with the Bonn Capitals, she competed in the European Championships in Saronno, Italy, where her team took bronze.

Prior to Weber State Hoe served as the head softball coach at Jackson Hole High School during its inaugural season.
